It’s that time of year again when summer squash is everywhere! These plentiful vegetables are packed with nutrients and so versatile to cook with! It’s low calorie, low-sugar, and its fiber and water content can help you stay fuller, longer. They are packed with vitamins A, B, and C, plus a hefty dose of fiber, magnesium, potassium, iron, and folate. Making sure I get as much nutritious food in my body is essential, so that I have the energy to work my butt off (literally) at Burn Boot Camp! So the next time you’re at the market, make sure to pick up a variety of them and add them to your breakfast, lunch, and dinner!
This recipe is so creamy and comforting, perfect to make in a crockpot so as to not heat up your house or on a wet rainy day (which hopefully we stop having!). I love to add curry to this dish, as is one of her substitutions. My kids like to dip their naan bread in this soup, but if you want to stay low carb and whole 30 compliant, you could add a few pepitas to the top for garnish!
I’m always on the hunt for a good grain free veggie burger and this one checks off all the boxes! I love the addition of sweet potatoes to give it more body and the creaminess of the zucchini! Add to the top of your salad, wrap in a lettuce wrap or eat as a fritter! They are the perfect recipe to use up all of your summer squash growing in the graden!
