As we are rounding into July, my family is soaking in all that summer has to offer, staying up late (and trying to sleep in), longer trips to the pool, trips to the park with friends, and picking berries at the farm, to mention a few. This is seriously the best time of the year!  No schedules, no homework, and no rules!    It’s also a time when gardens and farmers markets are getting packed with a bevvy of fruits and vegetables! These summer recipes take advantage of that!  They are full of delicious berries and veggies that you can find pretty much anywhere these days.  So don’t wait to partake in the bounty of local produce!  It only lasts a few short months!  

Watermelon Avocado Salad with Feta and Mint from Fool Proof Living

I love watermelon in the summer.  It’s so refreshing and cool!  But now that I’m an adult, I like to eat it with a little bit more flavor and finesse.  Cue this salad.  It’s delicious and cooling and a tad sweet from the watermelon, but also satisfies your adult taste buds!  


Summer Panzanella from Table for Two

My mom is Italian and always made tomato salad during the summer.  We would have it for every dinner with local corn and most likely hamburgers or grilled chicken.  She would always serve it with Italian bread to dip and it’s just so delicious!  This salad is very similar to the one I grew up eating, except everything is combined together (and my mom never added cheese).  Make sure to use the ripest tomatoes so that bread can absorb all the wonderful flavors of this dish!

One of my best friends in college is from Cyrus and she always made something like this in the oven.  I love the Greek flavors and I also really love that I can grill them, I mean my husband grills them!  Perfect for when you do not want to heat up your oven!  

Summer Vegetarian Tacos from Naturally Ella

Tacos are pretty much the best thing to eat during the summer!  This one loads up the summer produce and is so yummy!!  Use your favorite veggies for this dish or sometimes I like to add from grilled fish for a kick of protein!  So great and everyone loves them!
