I’m tired.  Make that Mayhaused (yes, that is now a word)!  The last thing I want to do is cook!  All of these school concerts, projects, sports, gymnastics, birthday parties, ballet rehearsals, nagging to get homework completed, nagging to wake up in the morning, boring packed lunches and by the way, did I say nagging, are draining me!  I need something quick, healthy, soul-filling and most importantly, my children need to eat it!  And eat it they will because I am sharing with you the quick, healthy and very tasty meals my kids ask for time and time again!  I’ve even included our favorite grain-free chocolate chip cookie to get you through even the longest awards ceremony!!  

We’ve only got a few weeks left until Summer, we can do this! Enjoy!  


Quick Meal Low Carb Cobb Salad from Low Carb Maven

I love salads.  You can really put in anything that you like, have leftover or in the fridge and call it a meal.  The salad dressing from this recipe is our go to.  We like to keep a jar of it in the fridge, so we always have it on hand.  It also doubles as a great marinade for grilled chicken!

Guys, this is so flavorful and delicious, my kids actually ASK me to make it.  And it comes together so quickly, it’s a no brainer for dinner!  Quick and Easy!  Dinner is DONE!  

15 Minute Lo Mein from Pinch of Yum

I love this quick and easy meal.  I like to make it when I have a fridge full of leftovers because my kids don’t even realize that’s what it is!!  Just boil some water and cook the pasta (I like to use angel hair because did I say quick?) and make the sauce and you are done!   It’s also pretty tasty cold!

Real Deal Chocolate Chip Cookies from Against All Grain

We LOVE these cookies.  They are grain free and so quick to make.  I just put all of the ingredients in my food processor and it does all the work!  The only problem with them is they disappear as quickly as you can make them!  (I suggest doubling the recipe…you won’t be sorry)
