There are still so many delicious vegetables available in your gardens or at the farmers market to keep summer alive a little while longer!!  So get them in while you can because local fruits and veggies cannot be beat!!  

Here are some recipes that incorporate a lot of summer vegetables, but have all the comforts of Fall!!  Because when I work up today, it’s was 59 outside!

I used to make something like this before we had kids all the time.  I think it’s time to get it back in our rotation!  

Late Summer Vegetable Bolognese with Creamy Polenta by Half Baked Harvest

I’m making this, this weekend!  This looks amazing!!  Since I’m trying to eat lower carb, I think I will sub out the polenta with some mashed cauliflower to add even more veggie goodness!!!

So simple to make, yet so flavorful and delicious!  It’s a serious crowd pleaser!

This is perfect on a night when you are rushing around taking the kids to sports and dance.  It’s also a perfect salad starter for a dinner party!!  And delicious to boot!
