20 Minute Everything Salmon Bowl

These 20 minute salmon bowls are everything.  They are so simple and so ridiculously satisfying.  I love everything but the bagel seasoning on everything, ha!  But I especially love it on salmon, and basically sprinkled on everything else in this bowl. This is a dish I could seriously eat every single day and not get tired of it.  And it’s as good for breakfast or lunch as it is for dinner.  Swap out salmon for rotisserie chicken.  Or I love it with some soft scrambled eggs too. Be right back – I’m going to get another bowl.

 

But before I do, a couple things.  The key to the broccoli is making sure it’s really dry after rinsing it off.  And also, to make sure when you toss it in olive oil you’re really massaging the oil into all the little crevices.  This will give you those delicious browned bits that take it over the top.  Also, the mat underneath the broccoli is a reusable cooking mat that takes the place of foil or parchment paper and it works so well!  I wrote a whole post about some sustainable swaps and there’s a few more for the kitchen in there as well.  Take a look!

The garnishes are key, so make sure not to skip those.  I put these pickled red onions on everything and they take about 2 minutes to make (just leave some time for the vinegar to work its magic in the fridge).  I usually leave them overnight.  The cilantro adds another layer of flavor and, of course, everything is better with the addition of the creaminess of avocado. 

Especially with the crunchy texture of the everything but the bagel seasoning.  And Cholula will always be my go to hot sauce- it’s got so much flavor and just enough heat that it really adds something to the dish. 

 I hope you love this dish as much as I do.  It’s another one of those ingredients meals that takes no time to make but is absolutely packed with healthy things and so much flavor.  Enjoy!

 

Cook Time: 20 minutes

Servings : 3-4

 

Ingredients:

2 salmon filets

1 bunch broccoli, cut into small florets

3 cloves garlic, roughly chopped

1-2 TBS everything but the bagel seasoning

EVOO

S&P

2 cups cooked rice

 

For Topping:

1-2 avocados, sliced

some pickled red onions – recipe here

your favorite hot sauce (mine is cholula!)

cilantro

 

Instructions:

  1. Preheat oven to 425.  Line 2 baking sheets with foil or parchment paper or these reusable baking mats!  Start cooking rice according to package instructions.
  2. Toss broccoli with 2 TBS EVOO, garlic, and S&P.  Be sure to rub EVOO into all the little crevices of the broccoli.  Spread in even layer on one of the baking sheets.
  3. Pat salmon dry with paper towel.  Drizzle EVOO over salmon to coat and place skin side down on second baking sheet.  Sprinkle everything but the bagel seasoning on top of salmon.
  4. Put broccoli and salmon in oven for about 15-20 minutes until broccoli starts to crisp and salmon reaches an internal temp of 145.
  5. Spoon rice into bowls and town with broccoli, salmon, avocado, pickled red onions, cilantro, hot sauce, and a little bit more everything but the bagel seasoning for good measure;)
